OOLONG TEA
Oolong is a type of tea that is neither black nor green but rather belongs to its own category. However, depending on the direction the tea master chooses in the processing of the tea, oolong tea may end up with more black tea qualities or more green tea characteristics.
Tea leaves begin to oxidize as soon as you harvest them. Allow for some oxidation and you’ll get a malty black tea with lots of tannic astringencies. Stop oxidation as soon as it begins and the vivid green features of the leaves for green tea will be preserved. Oolongs, or partially oxidized teas, are created by manipulating a batch of leaves to reach a specified oxidation degree in a precise method, then heating the leaves to fix the flavour and fragrance. Oolong tea is defined as any tea that has been oxidized between 8% and 85%.
SEMIFERMENTED OOLONG TEA , SUMMER HARVESTING
Our oolong from the land of the ‘thunderbolt’ is a mild semi-fermented tea, between black and green, produced only in small quantities for oolong lovers. Processing of this tea involves a special technique wherein the leaves, wrapped in cheesecloth are repeatedly foot rolled during the first 15 hours of withering.
This resulting beverage is a highly aesthetically pleasing tea with large uncut green/bluish leaves. The clear liquor is like honey and almost like nectar from fresh flowers.

STEEP THE PERFECT CUP
Place tea leaves in a cup, tea infuser or strainer and pour hot water over the leaves. Steep for 3-4 minutes. Best enjoyed plain without adding milk or sugar.
